Turkish Apricot and Feta Stuffed Bell Peppers

Ingredients
- 4 bell peppers, any color, sliced into 1-inch pieces
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 1 cup fresh apricots, diced
- 1/2 cup crumbled feta cheese
- 1 tsp ground cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
- 4 tbsp plain Greek yogurt
Preparation Steps
- Preheat the oven to 375°F (190°C). Rinse bell peppers in cold water, pat dry with paper towels. Cut off tops of bell peppers and remove seeds and membranes.
- In a large skillet, heat olive oil over medium-high heat. Sauté chopped onion until softened, about 5 minutes. Add cumin and smoked paprika, stir for 1 minute.
- Add diced apricots to the skillet, cook for an additional 2-3 minutes, until slightly tender.
- In a large bowl, combine cooked apricot mixture, crumbled feta cheese, salt and pepper to taste. Stir in plain Greek yogurt.
- Stuff each bell pepper with the prepared apricot-feta mixture. Cover tops of peppers with plastic wrap and bake for 30 minutes.
- Remove plastic wrap, cover baking dish with aluminum foil, continue baking for an additional 15-20 minutes or until tender
