Kyrgyz Qurutqoulu-Style Lamb and Apricot Tagine

Ingredients
- lamb shoulder 500g
- apricots 1 cup
- onions 2
- garlic 3 cloves
- cumin 2 tsp
- coriander 1 tsp
- cayenne pepper 1/2 tsp
- olive oil 2 tbsp
- chicken broth 1 cup
- flour 2 tbsp
- lamb stock 1/2 cup
- salt 1 tsp
- black pepper 1/2 tsp
- fresh parsley 1/4 cup
- fresh mint 1/4 cup
Preparation Steps
- Step 1: Preheat the oven to 150°C. Chop the lamb into small pieces and season with cumin, coriander, cayenne pepper, salt, and black pepper.
- Step 2: In a large pan, heat the olive oil and sauté the onions until softened. Add the garlic and cook for 1 minute.
- Step 3: Add the lamb pieces to the pan and cook until browned. Add the apricots and cook for 2 minutes.
- Step 4: In a large Dutch oven, combine the lamb and apricot mixture, chicken broth, and flour. Stir to combine.
- Step 5: Cover the pot and transfer it to the preheated oven. Braise for 2 hours or until the lamb is tender.
- Step 6: Stir in the lamb stock and cook for an additional 10 minutes.
- Step 7: Garnish with fresh parsley and mint.
- Step 8: Serve hot over rice or bread.
- Step 9: Serve the tagine with a dollop of sour cream and some crusty bread.
