Kashmiri Lamb Samosas

Ingredients
  • 1 pound lamb shoulder, finely chopped
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger paste
  • 1 tablespoon Kashmiri red chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • Salt, to taste
  • 2 cups all-purpose flour
  • 1/4 cup lukewarm water
  • Vegetable oil, for frying
Preparation Steps
  1. Preheat oil in a deep frying pan to 350°F (180°C).
  2. In a large bowl, combine lamb, onion, garlic, ginger paste, chili powder, cumin, coriander, and salt. Mix well.
  3. In a separate bowl, combine flour and lukewarm water to make a dough. Knead for 5 minutes.
  4. Roll out the dough to a thickness of 1/8 inch (3 mm). Cut into 2-inch (5 cm) squares.
  5. Place a tablespoon of lamb mixture at the center of each square. Fold the dough to form a triangle and press the edges to seal.
  6. Deep fry the samosas until golden brown, about 3-4 minutes per side.
  7. Drain the samosas on paper towels and serve hot with a chutney or raita.
