Dates and Coconut Brittle with Rosewater

Ingredients
- 2 cups of chopped dates ( Medjool or Khadrawi )
- 1/2 cup of unsalted butter, softened
- 1 cup of shredded coconut
- 1/4 cup of granulated sugar
- 1/4 teaspoon of ground cardamom
- 1 tablespoon of rosewater
- 1/4 teaspoon of salt
- 1/4 teaspoon of baking soda
- 2 cups of all-purpose flour
Preparation Steps
- Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.
- In a food processor, grind the dates until they form a smooth paste. Add sugar, cardamom, salt, and baking soda; process until combined.
- Add softened butter to the date mixture; process until it forms a dough.
- Gradually add flour to the dough; mix until a ball is formed.
- Divide the dough into 4-6 equal pieces. Roll each piece into a rope.
- Twist each rope to form the brittle. Place on the prepared baking sheet, leaving about an inch of space between each brittle.
- Bake for 15-20 minutes or until golden brown. Remove from oven and let cool.
- Drizzle with rosewater while still warm. Break into pieces and serve.
