Winter Citrus Panzanella

Ingredients
  • 4 cups stale Italian bread, cut into 1-inch cubes
  • 2 navel oranges, peeled and segmented
  • 1 grapefruit, peeled and segmented
  • 1/2 cup extra-virgin olive oil
  • 2 tbsp white wine vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • 1/4 cup crumbled goat cheese
  • 1/4 cup toasted pine nuts
Preparation Steps
  1. Preheat the oven to 350°F (180°C) and toast the bread cubes for 5-7 minutes, or until lightly browned.
  2. In a large bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, salt, and pepper.
  3. Add the toasted bread cubes to the bowl and toss to coat with the dressing.
  4. In a separate bowl, combine the orange and grapefruit segments.
  5. Add the bread mixture to the bowl with the citrus segments and toss gently to combine.
  6. Sprinkle the chopped parsley, crumbled goat cheese, and toasted pine nuts over the top of the salad and toss again to combine.
  7. Season with salt and pepper to taste, then serve immediately.
