Winter Citrus Panzanella

Ingredients
- 4 cups stale Italian bread, cut into 1-inch cubes
- 2 navel oranges, peeled and segmented
- 1 grapefruit, peeled and segmented
- 1/2 cup extra-virgin olive oil
- 2 tbsp white wine vinegar
- 1 tsp Dijon mustard
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley
- 1/4 cup crumbled goat cheese
- 1/4 cup toasted pine nuts
Preparation Steps
- Preheat the oven to 350°F (180°C) and toast the bread cubes for 5-7 minutes, or until lightly browned.
- In a large bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, salt, and pepper.
- Add the toasted bread cubes to the bowl and toss to coat with the dressing.
- In a separate bowl, combine the orange and grapefruit segments.
- Add the bread mixture to the bowl with the citrus segments and toss gently to combine.
- Sprinkle the chopped parsley, crumbled goat cheese, and toasted pine nuts over the top of the salad and toss again to combine.
- Season with salt and pepper to taste, then serve immediately.
