Ingredients
- 4 cups stale bread, cut into 1-inch cubes
- 1 large onion, thinly sliced
- 2 large tomatoes, diced
- 1 cup cucumber, sliced
- 1/2 cup extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- 1/4 cup fresh basil leaves, chopped
Preparation Steps
- Preheat the oven to 350°F (175°C).
- Toss the bread cubes with a little olive oil and toast in the oven for 5-7 minutes, or until lightly browned.
- In a large bowl, combine the toasted bread, sliced onion, diced tomatoes, and sliced cucumber.
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper to make the dressing.
- Pour the dressing over the bread mixture and toss to combine.
- Sprinkle the chopped basil leaves over the top and toss again to combine.
- Let the salad sit for at least 10-15 minutes to allow the flavors to meld.
- Serve the Tuscan Panzanella at room temperature.
