Spicy Southwestern Spring Rolls

Ingredients
  • 1 package of spring roll wrappers (about 20-24 sheets)
  • 1/2 pound ground turkey breast, cooked and seasoned with cumin, chili powder, and lime juice
  • 1/2 cup shredded carrots
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped cilantro
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 teaspoon sriracha sauce
  • Salt and pepper to taste
  • Sliced radishes, lime wedges, and chipotle aioli for serving (optional)
Preparation Steps
  1. Preheat the oven to 400°F (200°C).
  2. In a medium bowl, mix together the ground turkey, soy sauce, honey, sriracha sauce, cumin, chili powder, salt, and pepper until well combined.
  3. Lay a spring roll wrapper on a clean surface. Arrange about 1 tablespoon of the turkey mixture in the center of the wrapper.
  4. Add the shredded carrots and diced red bell pepper on top of the turkey mixture.
  5. Fold the bottom edge of the wrapper up over the filling, then fold in the sides and roll the wrapper into a tight cylinder. Repeat with the remaining wrappers and filling.
  6. In a small bowl, beat the eggs lightly for brushing the spring rolls before frying. Heat about 1 inch (2.5 cm) of oil in a large skillet over medium-high heat.
  7. Fry the spring rolls until golden brown and crispy, about 3-4 minutes per side.
  8. Transfer the fried spring rolls to paper towels to drain excess oil.
  9. Serve immediately with sliced radishes, lime wedges, and chipotle aioli (if desired).
