Spicy Southwestern Spring Rolls

Ingredients
- 1 package of spring roll wrappers (about 20-24 sheets)
- 1/2 pound ground turkey breast, cooked and seasoned with cumin, chili powder, and lime juice
- 1/2 cup shredded carrots
- 1/2 cup diced red bell pepper
- 1/4 cup chopped cilantro
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 1 teaspoon sriracha sauce
- Salt and pepper to taste
- Sliced radishes, lime wedges, and chipotle aioli for serving (optional)
Preparation Steps
- Preheat the oven to 400°F (200°C).
- In a medium bowl, mix together the ground turkey, soy sauce, honey, sriracha sauce, cumin, chili powder, salt, and pepper until well combined.
- Lay a spring roll wrapper on a clean surface. Arrange about 1 tablespoon of the turkey mixture in the center of the wrapper.
- Add the shredded carrots and diced red bell pepper on top of the turkey mixture.
- Fold the bottom edge of the wrapper up over the filling, then fold in the sides and roll the wrapper into a tight cylinder. Repeat with the remaining wrappers and filling.
- In a small bowl, beat the eggs lightly for brushing the spring rolls before frying. Heat about 1 inch (2.5 cm) of oil in a large skillet over medium-high heat.
- Fry the spring rolls until golden brown and crispy, about 3-4 minutes per side.
- Transfer the fried spring rolls to paper towels to drain excess oil.
- Serve immediately with sliced radishes, lime wedges, and chipotle aioli (if desired).
