Ingredients
  • 1 cup cooked edamame
  • 2 cups mixed greens
  • 1/4 cup crispy garlic, chopped
  • 1/4 cup grated carrot
  • 1/4 cup chopped cilantro
  • 2 tbsp soy sauce
  • 2 tbsp gochujang
  • 1 tsp sesame oil
  • 8 spring roll wrappers
  • Salt and pepper to taste
Preparation Steps
  1. Step 1: In a bowl, mix together edamame, mixed greens, crispy garlic, carrot, and cilantro.
  2. Step 2: In a small bowl, whisk together soy sauce, gochujang, and sesame oil.
  3. Step 3: Add the wet ingredients to the dry ingredients and stir until combined.
  4. Step 4: Lay out spring roll wrappers and place about 1 tablespoon of filling in the center of each wrapper.
  5. Step 5: Fold the bottom half up over the filling, then fold in the sides and roll up the wrapper to form a tight cylinder.
  6. Step 6: Repeat with remaining wrappers and filling.
  7. Step 7: Heat a large skillet or wok over medium heat and add about 1 inch of vegetable oil.
  8. Step 8: When the oil is hot, add 4-5 spring rolls to the skillet and fry until golden brown, about 2-3 minutes per side.
