Spicy Edamame Spring Rolls with Gochujang Dipping Sauce

Ingredients
- 1 cup cooked edamame
- 2 cups mixed greens
- 1/4 cup crispy garlic, chopped
- 1/4 cup grated carrot
- 1/4 cup chopped cilantro
- 2 tbsp soy sauce
- 2 tbsp gochujang
- 1 tsp sesame oil
- 8 spring roll wrappers
- Salt and pepper to taste
Preparation Steps
- Step 1: In a bowl, mix together edamame, mixed greens, crispy garlic, carrot, and cilantro.
- Step 2: In a small bowl, whisk together soy sauce, gochujang, and sesame oil.
- Step 3: Add the wet ingredients to the dry ingredients and stir until combined.
- Step 4: Lay out spring roll wrappers and place about 1 tablespoon of filling in the center of each wrapper.
- Step 5: Fold the bottom half up over the filling, then fold in the sides and roll up the wrapper to form a tight cylinder.
- Step 6: Repeat with remaining wrappers and filling.
- Step 7: Heat a large skillet or wok over medium heat and add about 1 inch of vegetable oil.
- Step 8: When the oil is hot, add 4-5 spring rolls to the skillet and fry until golden brown, about 2-3 minutes per side.
