Rosewater Crème Brûlée with Cardamom Tuile

Ingredients
- 2 large egg yolks
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1 tsp ground cardamom
- 1/4 tsp salt
- 1/2 tsp rosewater
- 1/4 cup unsalted butter, melted
- 1 1/2 cups all-purpose flour
- 1/2 tsp ground cardamom
Preparation Steps
- Preheat oven to 300°F (150°C).
- Whisk together egg yolks, sugar, salt, and rosewater until pale and thick.
- Add melted butter and whisk until combined.
- Strain mixture into a clean bowl to remove egg yolks.
- Whisk in heavy cream until well combined.
- Pour into 4-6 ramekins or small baking dishes.
- Bake for 25-30 minutes or until set.
- Let cool to room temperature.
- Cover with plastic wrap and refrigerate for at least 2 hours.
- Just before serving, sprinkle sugar over top and caramelize with a kitchen torch.
- While crust is baking, mix flour and cardamom in a small bowl.
- Press into a thin layer on a baking sheet.
- Bake for 5-7 minutes or until lightly browned.
- Let cool completely and break into pieces.
