Korean Chili Pork Tacos

Ingredients
  • 500g pork shoulder, diced
  • 2 tablespoons Gochujang chili paste
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, grated
  • 8-10 corn tortillas
  • 1 cup kimchi, chopped
  • 1 cup cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste
Preparation Steps
  1. In a large bowl, whisk together Gochujang chili paste, soy sauce, brown sugar, garlic, and ginger. Add the diced pork and marinate for at least 10 minutes.
  2. Heat a large skillet over medium-high heat and cook the marinated pork until browned and cooked through, about 5-7 minutes.
  3. Warm the corn tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
  4. Assemble the tacos by spooning the cooked pork onto a tortilla, followed by a spoonful of chopped kimchi and cilantro.
  5. Squeeze a sliver of lime juice over the top of each taco and season with salt and pepper to taste.
  6. Serve immediately and enjoy!
