Korean Chili Pork Tacos

Ingredients
- 500g pork shoulder, diced
- 2 tablespoons Gochujang chili paste
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon garlic, minced
- 1 tablespoon ginger, grated
- 8-10 corn tortillas
- 1 cup kimchi, chopped
- 1 cup cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
Preparation Steps
- In a large bowl, whisk together Gochujang chili paste, soy sauce, brown sugar, garlic, and ginger. Add the diced pork and marinate for at least 10 minutes.
- Heat a large skillet over medium-high heat and cook the marinated pork until browned and cooked through, about 5-7 minutes.
- Warm the corn tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Assemble the tacos by spooning the cooked pork onto a tortilla, followed by a spoonful of chopped kimchi and cilantro.
- Squeeze a sliver of lime juice over the top of each taco and season with salt and pepper to taste.
- Serve immediately and enjoy!
