Ethiopian Red Lentil Stew

Ingredients
- Red lentils, 1 cup
- Onion, chopped, 1 medium
- Garlic, minced, 3 cloves
- Ginger, grated, 2 inches
- Cumin, 1 tsp
- Coriander, 1 tsp
- Turmeric, 1/2 tsp
- Chili powder, 1/4 tsp
- Tomato paste, 2 tbsp
- Vegetable oil, 3 tbsp
- Red wine vinegar, 1 tbsp
- Water, 4 cups
- Niter kibbeh or vegetable oil for serving
Preparation Steps
- Step 1: Heat oil in a large pot over medium heat. Add onion and cook until softened.
- Step 2: Stir in garlic, ginger, cumin, coriander, turmeric, and chili powder. Cook for 1 minute.
- Step 3: Add red lentils, tomato paste, and 4 cups of water to the pot.
- Step 4: Bring the stew to a boil, then reduce heat to low and simmer for 30 minutes or until the lentils are tender.
- Step 5: Stir in vinegar. Season with salt to taste. Serve with niter kibbeh or vegetable oil.
