Caramel Pecan Tartlets

Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup confectioners' sugar
- 1/4 cup unsalted butter, chilled and cut into small pieces
- 1/2 cup pecan halves
- 1/2 cup caramel sauce
- 1/4 cup heavy cream
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Preparation Steps
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour and confectioners' sugar. Add the cold butter and use a pastry blender or your fingers to work it into the flour mixture until it resembles coarse crumbs.
- Press the mixture into a disk and wrap in plastic wrap. Refrigerate for 10 minutes.
- Roll out the dough on a lightly floured surface to about 1/4 inch thickness. Cut out small squares, about 3 1/2 inches per side.
- Spoon a small amount of caramel sauce onto one half of each square, leaving a 1/2 inch border around the edges. Top with a few pecan halves.
- Fold the other half of the dough square over the filling to form a triangle, pressing the edges to seal. Use a fork to crimp the edges.
- Brush the tops of the tartlets with the beaten egg and sprinkle with a pinch of salt.
- Bake for 20-25 minutes, or until golden brown. Allow to cool on a wire rack.
- Drizzle with additional caramel sauce, if desired, and serve warm.
