Burmese Chicken Curry

Ingredients
  • 1 1/2 pounds boneless chicken breast or thighs, cut into 1-inch pieces
  • 2 medium onions, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1 can (14 oz) diced tomatoes
  • 1 cup chicken broth
Preparation Steps
  1. Heat oil in a large pan over medium heat, add onions and cook until they are translucent
  2. Add garlic and ginger, cook for 1 minute
  3. Add the chicken, cook until it is browned on all sides
  4. Add the curry powder, cumin, turmeric, paprika, and cayenne pepper, stir well
  5. Add the diced tomatoes and chicken broth, stir well, then reduce heat to low and simmer for 20 minutes
  6. Season with salt to taste
  7. Serve hot over rice or noodles
  8. Garnish with fresh cilantro or scallions if desired
