Burmese Chicken Curry

Ingredients
- 1 1/2 pounds boneless chicken breast or thighs, cut into 1-inch pieces
- 2 medium onions, chopped
- 3 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
Preparation Steps
- Heat oil in a large pan over medium heat, add onions and cook until they are translucent
- Add garlic and ginger, cook for 1 minute
- Add the chicken, cook until it is browned on all sides
- Add the curry powder, cumin, turmeric, paprika, and cayenne pepper, stir well
- Add the diced tomatoes and chicken broth, stir well, then reduce heat to low and simmer for 20 minutes
- Season with salt to taste
- Serve hot over rice or noodles
- Garnish with fresh cilantro or scallions if desired
