Ingredients
  • 1 pound boneless chicken breast, cut into bite-sized pieces
  • 2 medium onions, diced
  • 3 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 can (14 oz) coconut milk
  • 2 tablespoons vegetable oil
  • 1 teaspoon ground cumin
  • 1 teaspoon curry powder
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • 4 cups cooked white rice
  • Fresh cilantro leaves, for garnish
Preparation Steps
  1. Heat the oil in a large pan over medium-high heat. Add the onions and cook until they start to brown.
  2. Add the garlic and ginger and cook for another minute, stirring constantly.
  3. Add the chicken and cook until it's browned on all sides.
  4. Stir in the cumin, curry powder, turmeric, salt, and pepper. Cook for 1-2 minutes.
  5. Pour in the coconut milk and stir to combine. Bring the mixture to a simmer.
  6. Reduce the heat to medium-low and let it cook, stirring occasionally, until the sauce has thickened.
  7. Fluff the cooked rice with a fork and stir in the chopped cilantro. Serve hot.
