Ingredients
- 1 pound boneless chicken breast, cut into bite-sized pieces
- 2 medium onions, diced
- 3 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1 can (14 oz) coconut milk
- 2 tablespoons vegetable oil
- 1 teaspoon ground cumin
- 1 teaspoon curry powder
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- 4 cups cooked white rice
- Fresh cilantro leaves, for garnish
Preparation Steps
- Heat the oil in a large pan over medium-high heat. Add the onions and cook until they start to brown.
- Add the garlic and ginger and cook for another minute, stirring constantly.
- Add the chicken and cook until it's browned on all sides.
- Stir in the cumin, curry powder, turmeric, salt, and pepper. Cook for 1-2 minutes.
- Pour in the coconut milk and stir to combine. Bring the mixture to a simmer.
- Reduce the heat to medium-low and let it cook, stirring occasionally, until the sauce has thickened.
- Fluff the cooked rice with a fork and stir in the chopped cilantro. Serve hot.
