Ingredients
  • 1 pound boneless chicken breast, cut into bite-sized pieces
  • 2 medium-sized bell peppers, sliced
  • 1 large onion, sliced
  • 2 cloves of garlic, minced
  • 2 tablespoons Thai green curry paste
  • 1 can of coconut milk
  • 1 teaspoon fish sauce
  • 1/2 teaspoon soy sauce
  • 1 tablespoon brown sugar
  • Salt and pepper to taste
  • Fresh basil leaves for garnish
Preparation Steps
  1. Heat oil in a large skillet over medium-high heat and cook the chicken until browned, about 5-6 minutes.
  2. Remove the chicken from the skillet and set aside.
  3. Add more oil if needed, then cook the sliced onion and bell peppers until tender, about 5 minutes.
  4. Add the minced garlic and cook for an additional minute, until fragrant.
  5. Add the Thai green curry paste and cook, stirring constantly, for 1-2 minutes.
  6. Pour in the coconut milk, fish sauce, soy sauce, and brown sugar, and stir to combine.
  7. Return the chicken to the skillet and stir to coat with the curry sauce.
  8. Reduce heat to low and simmer, covered, for 5-7 minutes, or until the chicken is cooked through and the sauce has thickened.
  9. Season with salt and pepper to taste, then garnish with fresh basil leaves and serve over rice or noodles.
