Ingredients
- 1 pound boneless chicken breast, cut into bite-sized pieces
- 2 medium-sized bell peppers, sliced
- 1 large onion, sliced
- 2 cloves of garlic, minced
- 2 tablespoons Thai green curry paste
- 1 can of coconut milk
- 1 teaspoon fish sauce
- 1/2 teaspoon soy sauce
- 1 tablespoon brown sugar
- Salt and pepper to taste
- Fresh basil leaves for garnish
Preparation Steps
- Heat oil in a large skillet over medium-high heat and cook the chicken until browned, about 5-6 minutes.
- Remove the chicken from the skillet and set aside.
- Add more oil if needed, then cook the sliced onion and bell peppers until tender, about 5 minutes.
- Add the minced garlic and cook for an additional minute, until fragrant.
- Add the Thai green curry paste and cook, stirring constantly, for 1-2 minutes.
- Pour in the coconut milk, fish sauce, soy sauce, and brown sugar, and stir to combine.
- Return the chicken to the skillet and stir to coat with the curry sauce.
- Reduce heat to low and simmer, covered, for 5-7 minutes, or until the chicken is cooked through and the sauce has thickened.
- Season with salt and pepper to taste, then garnish with fresh basil leaves and serve over rice or noodles.
