Ingredients
- 4 duck breasts (6 oz each)
- 1 cup cherry jam
- 1 cup port wine
- 1/4 cup shallots (chopped)
- 2 tbsp honey
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1 cup fresh cherries (pitted)
Preparation Steps
- Preheat the oven to 400°F (200°C).
- Season the duck breasts with salt, pepper, and thyme.
- Heat the olive oil in a skillet over medium-high heat and sear the duck breasts for 2-3 minutes per side.
- Transfer the skillet to the preheated oven and cook for 12-15 minutes or until the duck reaches the desired level of doneness.
- While the duck is cooking, prepare the cherry compote by combining the cherry jam, port wine, and chopped shallots in a saucepan.
- Bring the compote to a simmer over medium heat and cook for 5-7 minutes or until it thickens slightly.
- Stir in the honey and cook for an additional minute.
- To serve, slice the duck breasts and spoon the cherry compote over the top. Garnish with fresh cherries.
