Ingredients
  • 4 duck breasts (6 oz each)
  • 1 cup cherry jam
  • 1 cup port wine
  • 1/4 cup shallots (chopped)
  • 2 tbsp honey
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup fresh cherries (pitted)
Preparation Steps
  1. Preheat the oven to 400°F (200°C).
  2. Season the duck breasts with salt, pepper, and thyme.
  3. Heat the olive oil in a skillet over medium-high heat and sear the duck breasts for 2-3 minutes per side.
  4. Transfer the skillet to the preheated oven and cook for 12-15 minutes or until the duck reaches the desired level of doneness.
  5. While the duck is cooking, prepare the cherry compote by combining the cherry jam, port wine, and chopped shallots in a saucepan.
  6. Bring the compote to a simmer over medium heat and cook for 5-7 minutes or until it thickens slightly.
  7. Stir in the honey and cook for an additional minute.
  8. To serve, slice the duck breasts and spoon the cherry compote over the top. Garnish with fresh cherries.
