Spicy Edamame Spring Rolls with Gochujang Dipping Sauce

Ingredients
  • 1 cup edamame, shelled and cooked
  • 2 cups mixed greens (including mint and cilantro)
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 tablespoons sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1/4 teaspoon red pepper flakes
  • 12 spring roll wrappers (rice paper or wonton wrappers)
  • Gochujang dipping sauce (see below)
Preparation Steps
  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together rice vinegar, soy sauce, honey, sesame oil, garlic, ginger, and red pepper flakes.
  3. Add cooked edamame to the marinade and toss to coat.
  4. Prepare spring roll wrappers according to package instructions or rice paper/wonton wrapper wrapping technique.
  5. Fill each wrapper with edamame mixture, leaving a small border at the top.
  6. Fold the bottom half of the wrapper up over filling, then fold in sides and roll into a tight cylinder.
  7. Serve immediately, with Gochujang dipping sauce on the side.
