Spicy Edamame Spring Rolls with Gochujang Dipping Sauce

Ingredients
- 1 cup edamame, shelled and cooked
- 2 cups mixed greens (including mint and cilantro)
- 1/4 cup rice vinegar
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 2 tablespoons sesame oil
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1/4 teaspoon red pepper flakes
- 12 spring roll wrappers (rice paper or wonton wrappers)
- Gochujang dipping sauce (see below)
Preparation Steps
- Preheat the oven to 400°F (200°C).
- In a small bowl, whisk together rice vinegar, soy sauce, honey, sesame oil, garlic, ginger, and red pepper flakes.
- Add cooked edamame to the marinade and toss to coat.
- Prepare spring roll wrappers according to package instructions or rice paper/wonton wrapper wrapping technique.
- Fill each wrapper with edamame mixture, leaving a small border at the top.
- Fold the bottom half of the wrapper up over filling, then fold in sides and roll into a tight cylinder.
- Serve immediately, with Gochujang dipping sauce on the side.
