Sicilian Seafood Paella

Ingredients
- 1 cup uncooked Arborio rice
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 pound mixed seafood (shrimp, mussels, clams)
- 1 pound chorizo, sliced
- 1 can diced tomatoes
- 2 cups fish stock
- 1 teaspoon saffron threads
- Salt and pepper to taste
- Fresh parsley, chopped (optional)
Preparation Steps
- Heat the olive oil in a large paella pan or skillet over medium-high heat
- Add the diced onion and cook until translucent, about 5 minutes
- Add the minced garlic and cook for an additional minute
- Add the mixed seafood, chorizo, and cook until the seafood is lightly browned
- Add the diced tomatoes, fish stock, and saffron threads, stir to combine
- Add the Arborio rice, stir to coat the rice with the oil and distribute the ingredients evenly
- Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 20-25 minutes or until the rice is cooked and the liquid is absorbed
- Season with salt and pepper to taste, garnish with chopped parsley if desired
