Sesame-Crusted Falafel Bites

Ingredients
- 1 pound cooked chickpeas
- 2 tablespoons tahini
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/4 cup all-purpose flour
- 1/4 cup panko breadcrumbs
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: sumac for garnish
Preparation Steps
- Preheat the oven to 400°F (200°C).
- In a blender or food processor, combine tahini, garlic, cumin, salt, and pepper. Blend until smooth.
- Transfer the blended mixture to a bowl and stir in flour and panko breadcrumbs.
- Using your hands, shape the chickpeas into small balls, about 1-inch in diameter. Flatten each ball slightly into a disk shape.
- Coat each falafel with the sesame crust by dipping it in the blended tahini mixture, pressing gently to adhere.
- Place the coated falafel on a baking sheet lined with parchment paper.
- Drizzle olive oil over the falafel and bake for 15-20 minutes, flipping halfway through.
- Serve warm or at room temperature. Garnish with sumac if desired.
