Ingredients
- 1 1/2 pounds boneless chicken thighs, cut into bite-sized pieces
- 2 medium onions, chopped
- 3 cloves of garlic, minced
- 1 cup of uncooked basmati rice
- 2 cups of chicken broth
- 1 teaspoon of saffron threads, soaked in 1 tablespoon of hot water
- 1 tablespoon of olive oil
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- Salt and black pepper, to taste
Preparation Steps
- Heat the olive oil in a large saucepan over medium heat and sauté the chopped onions until they are translucent
- Add the minced garlic and cook for an additional minute, until fragrant
- Add the chicken to the saucepan and cook until it is browned on all sides and cooked through
- Add the cumin, coriander, salt, and black pepper to the saucepan and stir to combine
- Add the soaked saffron threads and their liquid to the saucepan and stir to combine
- Add the uncooked basmati rice to the saucepan and stir to combine with the chicken and spice mixture
- Add the chicken broth to the saucepan and bring to a boil
- Reduce the heat to low, cover the saucepan, and simmer for 20-25 minutes, or until the rice is cooked and the liquid has been absorbed
