Saffron Chicken Machboos

Ingredients
  • 1 1/2 pounds boneless chicken thighs, cut into bite-sized pieces
  • 2 medium onions, chopped
  • 3 cloves of garlic, minced
  • 1 cup of uncooked basmati rice
  • 2 cups of chicken broth
  • 1 teaspoon of saffron threads, soaked in 1 tablespoon of hot water
  • 1 tablespoon of olive oil
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • Salt and black pepper, to taste
Preparation Steps
  1. Heat the olive oil in a large saucepan over medium heat and sauté the chopped onions until they are translucent
  2. Add the minced garlic and cook for an additional minute, until fragrant
  3. Add the chicken to the saucepan and cook until it is browned on all sides and cooked through
  4. Add the cumin, coriander, salt, and black pepper to the saucepan and stir to combine
  5. Add the soaked saffron threads and their liquid to the saucepan and stir to combine
  6. Add the uncooked basmati rice to the saucepan and stir to combine with the chicken and spice mixture
  7. Add the chicken broth to the saucepan and bring to a boil
  8. Reduce the heat to low, cover the saucepan, and simmer for 20-25 minutes, or until the rice is cooked and the liquid has been absorbed
