Rosewater Panna Cotta with Fresh Berries and Pistachio Crunch

Ingredients
- Heavy cream 1 cup
- Granulated sugar 1/2 cup
- Rosewater 2 tsp
- Unflavored gelatin 1 tsp
- Large eggs 3
- Vanilla extract 1 tsp
- Fresh mixed berries 1 cup
- Chopped pistachios 1/2 cup
- Confectioner's sugar 1 tsp
Preparation Steps
- Step 1: In a small bowl, sprinkle the gelatin over 1/4 cup of cold water and let it soften for 5 minutes.
- Step 2: In a medium saucepan, combine the cream, sugar, rosewater, and vanilla extract. Heat over medium heat, stirring occasionally, until the sugar has dissolved and the mixture is hot but not boiling.
- Step 3: Remove the mixture from the heat and add the softened gelatin, stirring until it is fully dissolved.
- Step 4: In a large bowl, whisk together the egg yolks. Gradually add the warm cream mixture to the egg yolks, whisking constantly.
- Step 5: Pour the mixture into small individual serving cups or ramekins. Refrigerate for at least 4 hours or overnight until set.
- Step 6: Just before serving, sprinkle a layer of confectioner's sugar over the top of each panna cotta. Arrange a few fresh berries on top of each serving.
- Step 7: Sprinkle chopped pistachios over the berries for garnish. Serve chilled and enjoy!
