Rosewater Panna Cotta with Fresh Berries and Pistachio Crunch

Ingredients
  • Heavy cream 1 cup
  • Granulated sugar 1/2 cup
  • Rosewater 2 tsp
  • Unflavored gelatin 1 tsp
  • Large eggs 3
  • Vanilla extract 1 tsp
  • Fresh mixed berries 1 cup
  • Chopped pistachios 1/2 cup
  • Confectioner's sugar 1 tsp
Preparation Steps
  1. Step 1: In a small bowl, sprinkle the gelatin over 1/4 cup of cold water and let it soften for 5 minutes.
  2. Step 2: In a medium saucepan, combine the cream, sugar, rosewater, and vanilla extract. Heat over medium heat, stirring occasionally, until the sugar has dissolved and the mixture is hot but not boiling.
  3. Step 3: Remove the mixture from the heat and add the softened gelatin, stirring until it is fully dissolved.
  4. Step 4: In a large bowl, whisk together the egg yolks. Gradually add the warm cream mixture to the egg yolks, whisking constantly.
  5. Step 5: Pour the mixture into small individual serving cups or ramekins. Refrigerate for at least 4 hours or overnight until set.
  6. Step 6: Just before serving, sprinkle a layer of confectioner's sugar over the top of each panna cotta. Arrange a few fresh berries on top of each serving.
  7. Step 7: Sprinkle chopped pistachios over the berries for garnish. Serve chilled and enjoy!
