Roasted Cauliflower Fritters

Ingredients
- 1 head of cauliflower, broken into florets
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1/2 cup panko breadcrumbs
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1 egg, lightly beaten
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Preparation Steps
- Preheat the oven to 425°F (220°C).
- Toss the cauliflower florets with 1 tablespoon of olive oil, salt, and pepper on a baking sheet. Roast for 15-20 minutes, or until tender and lightly browned.
- In a large bowl, combine the roasted cauliflower, flour, Parmesan cheese, panko breadcrumbs, parsley, and garlic.
- In a separate bowl, whisk the egg and mix it into the cauliflower mixture until well combined.
- Using your hands, shape the mixture into 8-10 patties.
- Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Fry the cauliflower fritters for 3-4 minutes on each side, until golden brown and crispy.
- Serve the fritters hot with your favorite dipping sauce.
