Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup confectioners' sugar
- 1/2 cup unsalted butter, chilled and cut into small pieces
- 2 cups fresh raspberries
- 1/4 cup chopped fresh basil
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Preparation Steps
- Preheat oven to 375°F (190°C). Line an 8-inch square baking dish with parchment paper.
- In a medium bowl, whisk together flour, granulated sugar, and confectioners' sugar. Add the cold butter and use a pastry blender or fingers to work it into the dry ingredients until the mixture resembles coarse crumbs.
- Press half of the crumb mixture into the prepared baking dish.
- In a separate bowl, mix together the raspberries, chopped basil, and vanilla extract. Spread the raspberry mixture over the crumb base.
- In another bowl, mix together the rolled oats, brown sugar, and salt. Add this mixture to the remaining crumb mixture and stir until combined. Spread this topping evenly over the raspberry filling.
- Bake for 40-45 minutes, or until the topping is golden brown and the filling is bubbly.
- Remove from the oven and let cool completely in the pan before cutting into bars.
