Pan-Seared Duck Breast with Cherry Compote

Ingredients
- 4 duck breasts (6 oz each)
- 1 cup cherry jam
- 1 cup port wine
- 1/4 cup shallots (finely chopped)
- 2 tbsp honey
- 2 tbsp olive oil
- 2 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup fresh cherries (pitted)
Preparation Steps
- Preheat the oven to 400°F (200°C).
- Season the duck breasts with salt, pepper, and thyme.
- Heat the olive oil in an oven-safe skillet over medium-high heat. Sear the duck breasts for 2-3 minutes on each side, then finish cooking in the oven for 12-15 minutes.
- While the duck is cooking, prepare the cherry compote. In a saucepan, combine the cherry jam, port wine, and shallots. Bring to a boil, then reduce the heat and simmer for 10-12 minutes or until the compote has thickened.
- Stir in the honey and fresh cherries into the compote. Cook for an additional 2-3 minutes.
- Let the duck breasts rest for 5 minutes before slicing. Serve with the cherry compote spooned over the top.
