Ingredients
  • 4 duck breasts (6 oz each)
  • 1 cup cherry jam
  • 1/2 cup port wine
  • 1/4 cup shallots (chopped)
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh cherries for garnish
Preparation Steps
  1. Preheat the oven to 400°F (200°C).
  2. Season the duck breasts with salt, pepper, and thyme.
  3. Heat olive oil in a skillet over medium-high heat and sear the duck breasts for 2-3 minutes per side.
  4. Transfer the skillet to the preheated oven and cook for 12-15 minutes or until the duck reaches desired doneness.
  5. While the duck is cooking, combine cherry jam, port wine, and chopped shallots in a saucepan and bring to a boil over medium heat.
  6. Reduce the heat to low and simmer the cherry compote for 10-12 minutes or until thickened.
  7. Brush the duck breasts with honey during the last 2 minutes of cooking.
  8. Let the duck rest for 5 minutes before slicing and serving with the cherry compote.
