Ingredients
- 1 1/2 cups dried chickpeas, soaked overnight and drained
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
- 2 cloves garlic, minced
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 2 tablespoons lemon juice
- 1/4 cup all-purpose flour
- 2 tablespoons olive oil
Preparation Steps
- Preheat the oven to 375°F (190°C).
- In a food processor, combine the chickpeas, parsley, cilantro, garlic, cumin, smoked paprika, cayenne pepper, and salt. Process until well combined and slightly chunky.
- Stir in the lemon juice and flour. The mixture should still be slightly chunky.
- Using your hands, shape the mixture into small patties, about 1 1/2 inches (3.8 cm) in diameter and 1/2 inch (1.3 cm) thick.
- Place the patties on a baking sheet lined with parchment paper, leaving about 1 inch (2.5 cm) of space between each patty.
- Drizzle the tops with olive oil and gently toss to coat.
- Bake the falafel for 20-25 minutes, flipping them halfway through, until they're golden brown and crispy on the outside.
- Serve the falafel in a bowl with your choice of toppings, such as chopped tomatoes, shredded lettuce, and tahini sauce.
