Ingredients
  • 2 cups all-purpose flour
  • 1/2 cup semolina flour
  • 1/4 cup confectioners' sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground mahleb
  • 1/2 cup unsalted butter, melted
  • 1/4 cup rose water
  • 1/4 cup orange blossom water
  • 1 tablespoon orange zest
  • 1 cup chopped dates
Preparation Steps
  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the all-purpose flour, semolina flour, confectioners' sugar, baking powder, salt, and ground mahleb.
  3. Add the melted butter, rose water, and orange blossom water to the dry ingredients and mix until a dough forms.
  4. Knead the dough for 5-7 minutes until it becomes smooth and pliable.
  5. Divide the dough into small balls, about 1 inch in diameter.
  6. Flatten each ball into a disk shape and place a few pieces of chopped dates in the center.
  7. Fold the dough over the dates to form a triangle or a ball shape, and press the edges together to seal.
  8. Brush the tops with a little bit of water and sprinkle with orange zest.
  9. Bake for 20-25 minutes or until the ma'amoul are lightly golden brown.
