Mansaf Rice with Fried Cauliflower and Sumac

Ingredients
- 1 cup basmati rice
- 2 cups chicken broth
- 1 large head cauliflower
- 1/4 cup olive oil
- 2 tablespoons sumac
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 boneless lamb chops
- 2 cloves garlic
- 2 tablespoons lemon juice
Preparation Steps
- Step 1: Rinse the cauliflower and cut it into florets.
- Step 2: In a large pot, combine the rice and chicken broth. Bring to a boil, then reduce heat to low and simmer for 15 minutes.
- Step 3: Heat the olive oil in a large skillet over medium-high heat. Add the lamb chops and cook until browned on both sides, about 5 minutes per side.
- Step 4: Add the garlic to the skillet and sauté for 1 minute.
- Step 5: Remove the lamb from the skillet and set it aside. Sprinkle the sumac over the cauliflower florets and toss to coat.
- Step 6: Increase heat to high and add the cauliflower to the skillet. Cook, stirring occasionally, until golden brown, about 5 minutes.
- Step 7: Fluff the cooked rice with a fork and stir in the cumin, salt, and pepper.
- Step 8: Slice the lamb chops into thin strips and serve over the rice.
- Step 9: Garnish with the fried cauliflower florets and drizzle with lemon juice.
