Mansaf Rice with Fried Cauliflower and Sumac

Ingredients
  • 1 cup basmati rice
  • 2 cups chicken broth
  • 1 large head cauliflower
  • 1/4 cup olive oil
  • 2 tablespoons sumac
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 boneless lamb chops
  • 2 cloves garlic
  • 2 tablespoons lemon juice
Preparation Steps
  1. Step 1: Rinse the cauliflower and cut it into florets.
  2. Step 2: In a large pot, combine the rice and chicken broth. Bring to a boil, then reduce heat to low and simmer for 15 minutes.
  3. Step 3: Heat the olive oil in a large skillet over medium-high heat. Add the lamb chops and cook until browned on both sides, about 5 minutes per side.
  4. Step 4: Add the garlic to the skillet and sauté for 1 minute.
  5. Step 5: Remove the lamb from the skillet and set it aside. Sprinkle the sumac over the cauliflower florets and toss to coat.
  6. Step 6: Increase heat to high and add the cauliflower to the skillet. Cook, stirring occasionally, until golden brown, about 5 minutes.
  7. Step 7: Fluff the cooked rice with a fork and stir in the cumin, salt, and pepper.
