Kung Pao Chicken Fried Rice

Ingredients
  • 1 cup cooked rice (preferably day-old)
  • 2 cups mixed vegetables
  • 1/3 cup soy sauce
  • 1/3 cup chopped peanuts
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon ginger paste
  • 1 pound boneless chicken breast, cut into small pieces
  • 2 teaspoons cornstarch
  • Salt and pepper to taste
Preparation Steps
  1. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the garlic and ginger paste and stir-fry until fragrant.
  2. Add the mixed vegetables and cook for 2-3 minutes, or until they start to soften.
  3. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
  4. In a small bowl, whisk together the soy sauce, cornstarch, and a pinch of salt. Add the sauce to the skillet and stir-fry for another minute.
  5. Add the cooked rice to the skillet and stir-fry for about 2-3 minutes, breaking up any clumps with a spatula.
  6. Transfer the fried rice mixture to a serving platter and sprinkle with peanuts. Serve immediately.
  7. Season with salt and pepper to taste
