Kung Pao Chicken Fried Rice

Ingredients
- 1 cup cooked rice (preferably day-old)
- 2 cups mixed vegetables
- 1/3 cup soy sauce
- 1/3 cup chopped peanuts
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon ginger paste
- 1 pound boneless chicken breast, cut into small pieces
- 2 teaspoons cornstarch
- Salt and pepper to taste
Preparation Steps
- Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the garlic and ginger paste and stir-fry until fragrant.
- Add the mixed vegetables and cook for 2-3 minutes, or until they start to soften.
- Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
- In a small bowl, whisk together the soy sauce, cornstarch, and a pinch of salt. Add the sauce to the skillet and stir-fry for another minute.
- Add the cooked rice to the skillet and stir-fry for about 2-3 minutes, breaking up any clumps with a spatula.
- Transfer the fried rice mixture to a serving platter and sprinkle with peanuts. Serve immediately.
- Season with salt and pepper to taste
