Ingredients
- 1 lb beef (ribeye or sirloin), sliced into thin strips
- 1/4 cup Gochujang sauce
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon garlic, minced
- 1 tablespoon ginger, grated
- 8-10 corn tortillas
- 1 cup kimchi, chopped
- 1/4 cup cilantro, chopped
- 1 lime, cut into wedges
Preparation Steps
- In a large bowl, whisk together Gochujang sauce, soy sauce, brown sugar, garlic, and ginger. Add the sliced beef and marinate for at least 10 minutes.
- Preheat a grill or grill pan to medium-high heat. Remove the beef from the marinade and cook for 3-4 minutes per side, or until cooked to desired doneness.
- Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Assemble the tacos by slicing the cooked beef into thin strips and placing it onto a tortilla, followed by a spoonful of kimchi and a sprinkle of cilantro.
- Serve immediately and offer lime wedges on the side.
