Korean BBQ Beef Tacos

Ingredients
- 1 pound beef brisket, sliced into thin strips
- 1/2 cup Korean chili flakes (gochugaru)
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons rice vinegar
- 2 tablespoons garlic, minced
- 1 tablespoon ginger, grated
- 8-10 corn tortillas
- 1 cup kimchi, chopped
- 1/4 cup cilantro, chopped
- 1 lime, cut into wedges
Preparation Steps
- In a large bowl, whisk together chili flakes, soy sauce, brown sugar, rice vinegar, garlic, and ginger to make the marinade.
- Add the sliced beef to the marinade and mix well to coat. Cover and refrigerate for at least 30 minutes or up to 2 hours.
- Preheat a grill or grill pan to medium-high heat. Remove the beef from the marinade and cook for 3-4 minutes per side, or until cooked to desired level of doneness.
- Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
- Assemble the tacos by slicing the cooked beef into thin strips and placing it onto a tortilla, followed by a spoonful of kimchi and a sprinkle of cilantro.
- Serve the tacos with a wedge of lime on the side and enjoy.
- Garnish with additional kimchi and cilantro if desired.
