Korean BBQ Beef Tacos

Ingredients
  • 1 pound beef brisket, sliced into thin strips
  • 1/2 cup Korean chili flakes (gochugaru)
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 2 tablespoons garlic, minced
  • 1 tablespoon ginger, grated
  • 8-10 corn tortillas
  • 1 cup kimchi, chopped
  • 1/4 cup cilantro, chopped
  • 1 lime, cut into wedges
Preparation Steps
  1. In a large bowl, whisk together chili flakes, soy sauce, brown sugar, rice vinegar, garlic, and ginger to make the marinade.
  2. Add the sliced beef to the marinade and mix well to coat. Cover and refrigerate for at least 30 minutes or up to 2 hours.
  3. Preheat a grill or grill pan to medium-high heat. Remove the beef from the marinade and cook for 3-4 minutes per side, or until cooked to desired level of doneness.
  4. Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
  5. Assemble the tacos by slicing the cooked beef into thin strips and placing it onto a tortilla, followed by a spoonful of kimchi and a sprinkle of cilantro.
  6. Serve the tacos with a wedge of lime on the side and enjoy.
  7. Garnish with additional kimchi and cilantro if desired.
