Jerk Chicken Quinoa Bowl

Ingredients
  • 1 pound boneless, skinless chicken breast, cut into 1-inch pieces
  • 1 cup quinoa, rinsed and drained
  • 2 cups water
  • 2 tablespoons jerk seasoning
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can black beans, drained and rinsed
  • Salt and pepper to taste
  • Fresh cilantro leaves for garnish
Preparation Steps
  1. Preheat the oven to 400°F (200°C).
  2. In a medium saucepan, bring the quinoa and water to a boil. Reduce the heat to low, cover, and simmer for 15-20 minutes or until the quinoa is tender.
  3. In a large bowl, whisk together the jerk seasoning and olive oil. Add the chicken and toss to coat.
  4. Spread the chicken on a baking sheet and bake for 20-25 minutes or until cooked through.
  5. In a large skillet, heat a tablespoon of oil over medium-high heat. Add the onion, garlic, and red bell pepper. Cook for 5-7 minutes or until the vegetables are tender.
  6. Stir in the black beans and cook for an additional 2-3 minutes.
  7. To assemble the bowls, divide the cooked quinoa between four bowls. Top with the jerk chicken, vegetable mixture, and garnish with cilantro.
  8. Season with salt and pepper to taste, and serve immediately.
