Jerk Chicken Quinoa Bowl

Ingredients
- 1 pound boneless, skinless chicken breast, cut into 1-inch pieces
- 1 cup quinoa, rinsed and drained
- 2 cups water
- 2 tablespoons jerk seasoning
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can black beans, drained and rinsed
- Salt and pepper to taste
- Fresh cilantro leaves for garnish
Preparation Steps
- Preheat the oven to 400°F (200°C).
- In a medium saucepan, bring the quinoa and water to a boil. Reduce the heat to low, cover, and simmer for 15-20 minutes or until the quinoa is tender.
- In a large bowl, whisk together the jerk seasoning and olive oil. Add the chicken and toss to coat.
- Spread the chicken on a baking sheet and bake for 20-25 minutes or until cooked through.
- In a large skillet, heat a tablespoon of oil over medium-high heat. Add the onion, garlic, and red bell pepper. Cook for 5-7 minutes or until the vegetables are tender.
- Stir in the black beans and cook for an additional 2-3 minutes.
- To assemble the bowls, divide the cooked quinoa between four bowls. Top with the jerk chicken, vegetable mixture, and garnish with cilantro.
- Season with salt and pepper to taste, and serve immediately.
