Gormeh Sabzi Chicken Koftas

Ingredients
  • 1 lb boneless chicken breast
  • 1/2 cup chopped fresh parsley
  • 1/2 cup chopped fresh cilantro
  • 2 cloves garlic
  • 1/2 cup chopped scallions
  • 1/4 cup lime juice
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • Salt and pepper
  • 4 tbsp chopped dried sumac
  • 2 tbsp vegetable broth
Preparation Steps
  1. Preheat grill to medium-high heat. In a large bowl, combine chicken, parsley, cilantro, garlic, scallions, lime juice, olive oil, cumin, coriander, paprika, salt, and pepper. Mix well. Add sumac and broth, and mix again. Cover and refrigerate for 30 minutes. Divide mixture into 8 equal pieces. Shape into koftas. Grill for 8-10 minutes, turning occasionally.
  2. In a large bowl, whisk together yogurt and dill. Serve koftas with yogurt sauce.
  3. Serve koftas hot, garnished with parsley and scallions.
  4. Allow koftas to rest for 5 minutes before serving.
  5. Serve with steamed rice and additional sumac if desired.
  6. Garnish with chopped scallions and parsley before serving.
  7. Serve with raita (a yogurt and cucumber sauce) if desired.
  8. Let koftas cool completely before refrigerating or freezing.
  9. Refrigerate for up to 3 days, or freeze for up to 2 months.
  10. Reheat grilled koftas in a skillet with a little oil until browned and crispy.
  11. Serve with pita bread and a side of cucumber-tomato salad.
  12. Serve at a Middle Eastern-themed dinner party.
  13. This recipe is traditionally served at Persian and Turkish weddings.
  14. Make ahead: Prepare koftas and refrigerate or freeze for up to 3 days before grilling.
