Ingredients
- 1 head of cauliflower, broken into florets
- 1 cup all-purpose flour
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup breadcrumbs
- 2 large eggs
- 1 cup plain Greek yogurt
- 2 cloves garlic, minced
- 2 tablespoons freshly chopped dill
Preparation Steps
- Step 1: In a large bowl, mix together the flour, paprika, cayenne pepper, salt, and black pepper.
- Step 2: Add the breadcrumbs to the dry ingredients and stir until combined.
- Step 3: In a separate bowl, whisk together the eggs and Greek yogurt.
- Step 4: Add the garlic and dill to the egg mixture and stir to combine.
- Step 5: Pour the wet ingredients into the dry ingredients and stir until just combined.
- Step 6: Add the cauliflower florets to the batter and mix until they are evenly coated.
- Step 7: Heat about 1/2 inch of oil in a large skillet over medium-high heat.
- Step 8: Using a spoon, drop the cauliflower mixture into the hot oil, being careful not to overcrowd the skillet.
- Step 9: Cook the fritters until they are golden brown and crispy, about 3-4 minutes per side.
- Step 10: Serve the fritters hot with your choice of dipping sauce.
