Crab and Avocado Spring Rolls

Ingredients
  • 1 package of spring roll wrappers (20-24 wrappers)
  • 1/2 pound jumbo lump crab meat
  • 1 ripe avocado, diced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped scallions
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated ginger
  • Salt and pepper to taste
  • Vegetable oil for frying
Preparation Steps
  1. In a large bowl, gently combine crab meat, avocado, cilantro, scallions, soy sauce, rice vinegar, and ginger. Be careful not to break up the lumps of crab meat.
  2. Lay a spring roll wrapper on a flat surface with one corner pointing towards you. Place about 1 tablespoon of the crab mixture in the center of the wrapper.
  3. Brush the edges of the wrapper with a small amount of water. Fold the bottom corner of the wrapper over the filling, then fold in the sides and roll up the wrapper to form a tight cylinder. Repeat with the remaining wrappers and filling.
  4. Heat about 2-3 inches of vegetable oil in a large skillet over medium-high heat. When the oil is hot, add a few of the spring rolls to the skillet (do not overcrowd) and fry until golden brown, about 2-3 minutes on each side.
  5. Remove the spring rolls from the oil and drain on paper towels. Serve warm with your favorite dipping sauce.
